Pour the butter over the cereal mixture, mixing well. Sprinkle the cheese and onion powder over the mixture and toss well to thoroughly coat. –Applebee’s Oriental Chicken Salad–

1 egg

1/2 cup milk

1/2 cup flour

1/2 cup corn flake crumbs

1 teaspoon salt

1/4 teaspoon pepper

1 boneless, skinless chicken breast half

oil for frying

3 cups chopped romaine lettuce

1 cup red cabbage

1 cup Napa cabbage

1/2 carrot, julienned or shredded

1 green onion, chopped

1 tablespoon sliced almonds

1/3 cup chow mein noodles

Dressing:

3 tablespoons honey

1 1/2 tablespoons rice wine vinegar

1/4 cup mayonnaise

1 teaspoon Grey Poupon Dijon mustard

1/8 teaspoon sesame oil

Prepare dressing ingredients by mixing in a small bowl. Refrigerate while preparing salad.

Cut each chicken breast into 5 strips. In one bowl, beat egg with milk.

In another bowl, combine flour with corn flake crumbs, salt and pepper.

Preheat oil over medium heat.

Dip individual chicken pieces in egg mixture and then roll in the flour mixture. Fry chicken until browned, drain and set aside. Prepare salad by tossing the chopped romaine with the chopped red cabbage, Napa cabbage, and carrots. Sprinkle sliced green onion on top of the lettuce. Sprinkle almonds over the salad, then the chow mein noodles.

Cut the chicken into small chunks. Place the chicken onto the salad forming a pile in the middle. Serve with salad dressing on the side.

 

 

–Applebee’s Baby Back Ribs–

3 racks (about 1 lb. each) pork baby back ribs, each cut in half Barbecue sauce:

1 cup ketchup

1/4 cup apple cider vinager

3 tablespoons dark brown sugar

3 tablespoons worcestershire sauce

1 teaspoon liquid smoke

1/2 teaspoon salt

1. Put ribs in a large pot with enough water to cover them. Bring water to a boil, reduce heat, cover and simmer 1 hour or until ribs are fork tender.

2. Mix all sauce ingrediants together in a medium sauce pan and bring to a boil, reduce heat and simmer uncovered, stirring often, for 30 minutes or until slightly thickened.

3.Heat broiler. Line broiler with foil for easy cleanup. Place ribs, meat side down, on broiler pan, brush with 1/2 the sauce and broil 4-5 inches from heat source for 6 to 7 minutes. turn ribs over, brush with remaining sauce and broil 6 to 7 minutes longer or until edges are slightly charred.

 

–Applebee’s Bourbon Street Steak–

1/2 cup bottled steak sauce

1/4 cup bourbon whiskey

1 tablespoon honey

2 teaspoons prepared mustard

4 beef rib, round, or chuck steaks (10 ounces each)

Combine all the ingredients except the steaks in a baking dish or resealable plastic storage bag; mix well. Add the steaks; cover (or seal) and refrigerate for 2 hours, or overnight. Preheat the grill to medium-high heat. Grill the steaks for 12 to 15 minutes, or until desired doneness, turning them over halfway through the grilling.

 

–Applebee’s Blonde Brownies–

2 cups flour

1 tsp. baking powder

3 /4 tsp. salt

1/4 tsp. baking soda

1 1/4 sticks unsalted butter (10 Tbsp.)

2 cups packed golden brown sugar

2 large eggs

2 tsp. vanilla

3/4 cup chocolate chips

3/4 cup chopped pecans

Preheat oven to 350 degrees. Flour and butter a 9 x 13 x 2 pan. Sift flour into a bowl. Mix flour, baking powder, salt, and baking soda. Set aside. Melt butter. In mixing bowl, place melted butter and add sugar, mixing well. Add eggs and vanilla, mixing well. Add flour slowly, blending. Batter will be slightly thick.

Spread in pan. Sprinkle chocolate chips and pecans over all. Bake for 25 – 30 minutes…

 

–Applebee’s Lemonade–

 

1 Quart water

1 Cup sugar

1 Cup FRESH lemon juice

Sparkling Water (not tonic water, like Perrier) Mix first three togther. Fill a tall glass 2/3 to 3/4 with Lemon mixture then fill with sparkling water.

An intresting variation is to puree some fruit (raspberries, strawberries, etc) with a little superfine or powdered sugar and put that in the glass before adding the the lemonade and water.

How To Make A Quick And Easy Tex-Mex Casserole

This recipe for Tex-Mex Made Easy Dish is a great recipe on a busy day.  It is table ready in a half hour, tasty, and makes enough to serve 8 to 10.  Serve with your choice: a salad, sour cream, salsa, whole-kernel corn, tortillas, etc. to round out the meal.  Too busy to make a dessert?  Serve ice cream with some cinnamon-flavored cookies.

TEX-MEX MADE EASY DISH

4 cups water1 cup chopped onion1 cup chopped green bell pepper1/4 tsp salt1/4 tsp pepper1 pkg (1 1/4-oz) taco seasoning mix, divided4 cups uncooked instant rice2 cans (8-oz each) no-salt added tomato sauce1 lb lean ground beef1 can (16-oz) fat-free refried beans1 pkg (8-oz) reduced-fat shredded Mexican blend cheese

Preheat oven to 350 degrees.

In a large saucepan, combine the water, chopped onion, chopped bell pepper, salt, and pepper along with half the packet of taco seasoning mix. Bring the mixture to a boil over medium-high heat. Remove from the heat. Stir in the rice and allow to stand, covered, for 5 minutes. Stir in the tomato sauce.

Meanwhile, cook the ground beef in a large nonstick skillet over medium-high heat until thoroughly browned, stirring to crumble. Drain and rinse with hot water. Return to the skillet and stirring in the remaining half of the taco seasoning mix.

Spray a 9 x 13-inch baking pan or dish with nonstick cooking spray. Spread half the rice mixture into the bottom of the pan or dish. Spread the beans evenly over the rice mixture. Top rice with the beef mixture and sprinkle beef with half the package of cheese. Spread remaining rice mixture over the cheese; top with remaining cheese. Bake at 350 degrees for 10 to 15 minutes until cheese melts and casserole is bubbly.

Enjoy!

Serve with salsa, sour cream or other condiments, if desired.

Quick and Easy Dessert, Shortcut Warm Banana Chocolate Crepes

For all you busy cooks who want to have a homecooked meal including dessert ready in a matter of minutes, here is a simple dessert you can make in a matter of minutes.  These Shortcut Warm Banana Chocolate Crepes are not only quick, they taste good, too.  Bananas are a great health food and should be included in your diet often.

1 small pkg (4-serving size) Chocolate Instant Pudding Mix1 1/2 cups milk6 tbsps butter6 tbsps brown sugar3 med bananas, sliced3 large burrito-style flour tortillas6 tbsps frozen whipped topping, thawedIn a medium bowl, with a wire whisk, beat the dry pudding mix into the milk. Whisk 2 minutes to thicken; set aside.

In a large skillet, place the butter and brown sugar. Cook mixture over medium heat until butter is melted and the mixture is well blended, stirring occasionally. Add banana slices; cook while stirring for a couple of minutes until heated through. Transfer banana mixture to a bowl and cover to keep warm.Heat the tortillas, one at a time, in the same pan used above. Remove heat tortilla from pan and spoon about 1/2 cup of the pudding mixture evenly down the center of each tortilla. Top the pudding mixture evenly with the banana mixture. Fold in both ends of the tortilla, then roll up. Cut each tortilla, crosswise, in half to make 6 tortilla “crepes”.

Place each half, seam side down on a serving plate. Top each half with approximately 1 tablespoon whipped topping before serving immediately.

NOTE: You can also buy ready-to-use crepes if you don’t like tortillas.

Here are recipes for a quick and easy meal that can be enjoyed by the whole family including any diabetics.  The Sausage and Kraut Skillet Meal is ready in 35 to 40 minutes.  This dish has meat, vegetables, and fruit in one skillet.  Personally, I always enjoy cornbread with sauerkraut so I have added a cornbread recipe here.  Serve these recipes either together or separately.  You are sure to enjoy them.SAUSAGE & KRAUT SKILLET MEAL2 tbsp canola oil1/4 cup diced onion1/4 cup diced green bell pepper3 cups Deli-Fresh Sauerkraut1 cup diced apples2 lbs smoked sausageIn a large heavy saucepan, heat the canola oil.  Add the onion and bell pepper and saute about 5 minutes until tender.  Add the sauerkraut and apples to the skillet.  Cover and cook over low heat for 25 to 30 minutes or until the apples are tender, stirring occasionally. Meanwhile, saute sausage until browned.  Top the hot sauerkraut mixture with sausage and serve while hot.Yield: 6 servingsMEXICAN CORNBREAD

How To Make Quick And Easy Broccoli Soups: Broccoli Chowder And Broccoli & Corn Chowder

Soups and chowders are almost always a way to make a quick and easy meal.  Whether for a light lunch, as an appetizer before a meal, or just because you love soups, here are a couple of quick and easy broccoli soups worth trying; Broccoli Chowder and Broccoli & Corn Chowder.  Broccoli is a great, healthy vegetable we should all eat more often.  So both of our soup/chowders today feature this healthy vegetable.

CREAMY CORN AND BROCCOLI CHOWDER

1 tbsp butter1/2 cup chopped onion3 cups water1 1/4 cups instant mashed potato flakes2 cups fresh or frozen broccoli flowerets1 1/2 cup fresh or frozen whole kernel corn1/4 tsp salt1/8 tsp garlic powder1/8 tsp pepper1 cup fat-free evaporated milk

Melt butter in a 3-quart saucepan over medium-high heat. Add onion to butter and cook, stirring, until translucent. Stir in the water and bring to a boil. Add potatoes, stirring constantly for about a minute. Add broccoli, corn, salt, pepper and garlic powder. Return to boiling then reduce heat to low. Simmer approximately 10 minutes or until the vegetables are tender; stir often. Once vegetables are tender, stir in the milk and cook another 3 to 4 minutes until heated through.

QUICK AND EASY BROCCOLI CHOWDER

1 pkg (10-oz) frozen chopped broccoli1 tbsp dried minced onion1 can (10 3/4-oz) condensed cream of chicken soup1 cup milk1 cup shredded cheddar cheese1/8 tsp ground red pepper

In a medium saucepan bring 1/2 cup water to boiling; add broccoli and onion. Cover and simmer about 5 minutes or until the broccoli is crisp tender. Stir in the soup, milk, cheese, and red pepper. Cook and stir about 4 minutes or until heated through.
